I open 3x from CO, BTN and BB call.
I hold AQ
Flop comes J68

Should I bet this flop with the intention to 3 barrel a heart or gut shot?

Obviously I also have 2 over cards to outdraw my opponent too

It kind of depends on who the BTN and BB is. As a default I would go and bet here with our backdoors and overcards.

If we're talking about unknowns then I'm not sure about committing to 3 barrels with no reads at all is wise. I don't mind c betting with so many decent turn cards though.

Man this hand can have so many variables - but yeh at first sight you can start by thinking we have a hand that can apply a lot of pressure if either or both of the villains decide to just call when we CB and we turn some equity.

You can't really decide your going to go for 3 barells though on this type of board texture when it's 3 handed on the flop, too much can change on the turn.

While this hand has a decent chunk of equity, this board has the potential to have really smashed a decent chunk of our opponents calling ranges. It's very difficult to have both opponents miss here given how connected the board is and the chances of getting the initial bet through is very slim. Typically I'm not a fan of committing to a multistreet bluff in a multiway pot where I can avoid it.

v.good point FergB I see all that Marc Kennedy goodness is wearing off on to you. This is also why I opted to check.

Looking back like you said, there's a low probability of getting the bluff through 2 players on that board.
Calling ranges are going to be strong so the turn bluff when we catch a good turn isn't going to work all that often either.
I think we need someone like Marc to say for sure, cause the maths might just work out even with the low success rates.

Definitely cbet.

Fire nut gutshots, FDs, and top pairs on the turn.

Check back busted nut gutshots and FDs on river given that we have A-high, and obviously continue to value-bet top pair. Its not really the right hand to triple barrel bluff, although the expectation would typically be positive, so it wouldn't be a bad play in that sense.
