I'd made the turn a lot bigger vs a fish like $8.25 and shove river. I'd perfer shoving the river to get calls from 76/65/7x and overpairs. GG if they have an 8.

I agree with bigger on the turn. It's such a common pattern for fish to call twice then give up on the river .

As played against this player jamming should do just fine. Even if it's slightly below 50% we do gain some protection from getting bluffed or risking him shoving TT or such, if you're adament that you don't like check calling.
